English Muffin Pizza

  New Favorite: English Muffin Pizza


This meal literally takes 5 minutes or less to prepare, and only 5-10 minutes to bake! Dinner in 15 minutes, beat that!

Cut english muffin in half and place on cookie sheet (per person) 
Spread pizza sauce on top.
Sprinkle a little cheese (not too much, or the texture will be too gewy).
Cut pepperoni into smaller pieces and lay evenly. 
Add chopped bell pepper, tomatoes, olives, and whatever else you like on pizza! 
Sprinkle extra cheese. Bake at 400 degrees for 5-10 minutes - watch closely until the edges look a little crisp.

We have seriously made this 6 or 7 times in the past month. It's so easy to precut all the veggies and just slap 'em on! It's also incredibly cheap, a little goes a long way. Try it out! Hopefully you'll love it as much as we do :)

IBC

Integrated Business Course = Part of the business program at BYU-Idaho where students run a business for 8 full weeks while simultaneously learning in depth about Marketing, Finance, Supply Chain, and Organizational Behavior. 


I was put into a group with 14 other students and we started the company, SML (small, medium, large). We sold equalizer shirts (shirts that light up with the beat of music), as well as printed graphic tees and business to business made shirts. We made a booth from scratch, ordered shirts from a supplier overseas, and printed the graphic shirts ourselves with custom designs. Our business was organized into four departments: Supply Chain/Operations, Marketing, Finance, and Sales.


Our mission statement: We believe in dedication, first to our customers in supplying a quality product and happy atmosphere, second to our suppliers in dealing with them fairly and timely, and lastly to each other as a company. All aspects of our life, within and out of the company, will be defined by honesty and integrity through our example and service. We will achieve success with hard work, learning from mistakes, and maintaining focus.


Through the thick and thin, our company pulled through by paying off our loan and actually making more profit than expected. We were surprised with the results of our company and we learned a lot throughout the semester. For the last four weeks, I was promoted to Supply Chain/Operations Manager. I was able to work closely with my classmates and really figure out how to interact with people. These are a just a few things I learned from IBC...


Organization is important (drawers with labels for our shirts)
Inventory control is crucial (weekly checks)
Communication is key (between department heads especially)
Delegation (understanding how to delegate to specific types of people)
Don't take it personal
The more people, doesn't necessarily mean the better (assembly line, smaller meetings)
Embrace your target market, even if you'd hoped for something different
Record finances in detail and keep them updated
Do fun things outside of work to unify the company. Get to know everyone upfront
Have a sense of humor
Be confident when suggesting new ideas
Be proactive. Don't worry about getting credit, just put in the work anyways
Consider lead times and make orders in advance
Market Research helps with forecasting specific sizes, styles, etc.
Scheduling booth shifts ahead of time makes it easier to find replacements for later
Provide an atmosphere people want to be around
SML. Light up Your World.

5 Good Things

Too many days have gone by of focusing on myself. There are so many things I feel are missing in my life, but I focus too much on those. I want to blog today about the positive things in my life, about what makes me happy and what I am so incredibly blessed with. I live the best life ever, and this is why...


1. My husband loves me.
What a blessing it is to have Bryant in my life. He is everything to me. Although I'm not the best at showing it, I am so appreciative of all his hard work. He is so willing to help those around him. Bryant is incredibly creative and such an inspiration to me. He is my best friend; I love him. 


2. I was raised by incredible parents. 
My parents have taught me to be hard working, to try my best, and to serve others. They have taught me through their own examples of taking every initiative to help people around them. I've watched them for several years and am still amazed at how much they do and how inspiring they are. 


3. I have goals in mind. 
It's easy for me to get weary of the future. My mind loses focus of what's important and I start comparing myself easily. Setting goals for myself helps me to see a clear plan of how I can control the things in my life. Not everything can be accomplished all at once, but we all have to start somewhere. 


4. It's summertime. 
Thank goodness school is about done. It's been an enjoyable semester, but I always look forward to a change of pace. I look forward to picnics with Bryant, more movie nights, more exercise, less homework, and hopefully some fun projects. It's going to be a great summer.


5. My apartment is clean right now. 
When the apartment is clean, I feel so much happier. My husband is cleaner than I am and it's wonderful. It's not always clean, and there is always more to do, but having open spaces to work in and relax makes all of the difference.

Coconut Lime Chicken


This recipe is delicious. Extremely flavorful and somewhat easy. It takes a little bit of time, so if you have busy weekdays, I would suggest making it on a Saturday or Sunday evening. It's completely dairy free and doesn't leave you feeling heavy afterwards! 

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
3 cloves garlic, minced
1-2 tsp curry powder
1 14 oz can light or regular coconut milk
1 4 oz. can diced green chiles
Zest and juice of 1 lime
1/4 cup green onion, chopped
2 tbsp fresh cilantro, chopped (optional)

Heat the oil in a large skillet over medium heat.  Add the chicken and garlic and cook until golden brown on all sides, about 5 minutes, stirring frequently. Add the curry powder and cook, stirring for 1 minute, until it is fragrant. Add the coconut milk, chiles, lime juice and zest, bring to a simmer, and simmer until the chicken is just cooked through, about 5 minutes. Season to taste with salt and pepper. Remove from the heat, stir in the green onions and cilantro.  Serve over rice.
